Chef De Partie Sushi – Four Seasons Yachts – Jakarta
Job Description
Tasks and Responsibilities :
• Prepare and present a variety of sushi and sashimi, including nigiri, maki, and temaki, utilizing authentic techniques and ingredients.
• Demonstrate proficiency in the selection and handling of seafood, rice preparation, and the use of specialized sushi tools.
• Responsibility is to prepare and serve sushi and related dishes efficiently, showcasing both traditional techniques and innovative presentations.
• Collaboration with the Chef de Cuisine Sushi Chef and other culinary team members is essential to enhance the overall dining experience.
Other Duties and Responsibilities :
• Uphold strict standards of food safety and hygiene, conducting regular checks on ingredients and prepared dishes to ensure compliance with health regulations.
• Monitor inventory levels of sushi ingredients and communicate needs for restocking to the Chef de Cuisine Sushi Chef.
• Maintain meticulous attention to detail in all aspects of sushi preparation, ensuring high standards of taste and presentation.
Requirements :
• Minimum of 3 years of dedicated sushi preparation experience in a professional kitchen, with a focus on luxury hospitality or yacht/cruise line operations preferred.
• Strong communication skills and proficiency in English are essential.
• Familiarity with food and beverage operational systems is a must.
• Michelin Star restaurant or hotel experience is considered ideal.
Preferred :
• Fluency in additional language(s)
• Cruise Ship Experience.
Required computer skills :
• Proficient in MS Office (PowerPoint, Word, Excel and Outlook).
• Possess sufficient computer knowledge to use the company software.
