Chef de Partie Sushi – Disney Cruise Line – Yogyakarta
Job Description
Tasks and Responsibilities :
• Expert in Sushi and Sashimi production, service and presentation
• Adhere to all department operating procedures, providing feedback on recipe formulation to the Sous Chef, • Chef de Cuisine or Assistant Manager Food Operations or Manager Food Operations
• Ensure every food item leaving the Galley is of the highest quality in flavor and presentation.
• Guide lead and train direct reports up to Disney Cruise Line Standards.
• Execute company recipe guidelines for assigned area of responsibility via recipe booklets, plate presentation and audits.
Requirements :
• Minimum two years – three years of work experience (or six years with two in a comparable role)
• Ship experience
• Proficiency in all kitchen stations, safe food handling, and recipe following
• Must be proficient in safe food handling, HACCP / USPH
• Demonstrates a commitment to culinary career with a desire to grow within the F&B industry; demonstrates a passion for food
• Must be able to work on a multi-cultural team in a confined environment
