Chef De Cuisine Sushi – Four Seasons Yachts – Jakarta
Job Description
Tasks and Responsibilities :
• Responsibility is to deliver outstanding sushi quality and service while mentoring and developing the culinary team through an inspirational and inclusive leadership approach.
• Collaboration with the Executive Chef and Food & Beverage Director is essential to create and implement innovative sushi concepts, manage budgets, and uphold the highest standards of service and hygiene.
• Sushi acts as the primary point of contact for premium seafood vendors and specialty vendors for high-end Japanese ingredients.
Other Duties and Responsibilities :
• Collaborate with corporate culinary teams to design innovative sushi menus that reflect current trends and cater to diverse dietary preferences, including vegetarian and gluten-free options.
• Regularly review and update menu offerings based on guest feedback, seasonal ingredients, and
emerging culinary trends.
• Uphold high standards of sushi quality, presentation, and safety, ensuring compliance with health,
safety, and sanitation regulations.
Requirements :
• Minimum of 10 years in food and beverage management, with at least 5-7 years in a sushi chef or master sushi chef role.
• Proven experience in fine dining or luxury hospitality focused on sushi or Japanese cuisine is preferred.
• Exceptional skills in sushi preparation, knife techniques, and knowledge of traditional Japanese
cooking methods are required.
• Strong communication skills and proficiency in English are essential.
• Familiarity with food and beverage operational systems is a must.
Preferred :
• Fluency in additional language(s)
• Cruise Ship Experience.
Required computer skills :
• Proficient in MS Office (PowerPoint, Word, Excel and Outlook).
• Possess sufficient computer knowledge to use the company software.
